Avocado-Corn Salsa

Yield:  6 cups (12 – 1/2 cup servings)

Ingredients:

  • 2.5 cups frozen whole kernel corn, thawed (or 2 15.25 oz cans sweet whole kernel corn)
  • 1 medium tomato, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup white wine vinegar
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 3 small avocados, peeled and chopped

Combine all ingredients except avocado,  Gently stir in avocado.  cover and chill for at least 2 hours.  Serve with tortilla chips or grilled fish or chicken.
