Garlic Roasted Brussel Sprouts

Ingredients:

  • 1 bag of Brussel Sprouts (1-2 lbs)
  • 2-3 tablespoons of olive oil
  • Kosher Salt & Pepper
  • 3 garlic cloves, whole

Preparation:

If you like Brussel Sprouts, you can’t beat this easy dish to prepare.  Especially if you’re roasting in a hot oven, this will accompany your main dish in one oven together.

Preheat the oven to 400 degrees.

Bring a good size pot of water to boil, salt the water liberally.

Wash & trim the ends of the Brussel Sprouts, then cut each sprout in half.

Blanch the sprouts in the water for about 10-15 minutes, or just until a fork can pierce the sprout, with some resistance (you don’t want them cooked all the way through.

In a shallow baking dish, sprayed with cooking spray, , transfer the sprouts directly from the water with a large slotted spoon, shaking away excess water over the pot before transferring.

Toss the warm sprouts in the baking dish with enough olive oil to coat and season well with salt and pepper.  \

Smash the 3 garlic cloves once with the side of a knife to open them up, and add to the sprouts. 

Roast at 400 degrees, stirring occasionally, until slightly browned.  Serve and enjoy (and maybe take out the garlic…)
