Impossibly Easy Breakfast Bake (GF)

For some reason I end up at a lot of breakfast meetings. People bring the yummiest smelling and looking things to share. There’s always a ton of biscuits, bagels, grits, fruit, and breakfast casseroles. Unfortunately since I have to eat gluten free I gravitate towards fruit only because I don’t want to bore all the chefs with questions about what they put in their grits and casseroles. I already know I can’t eat biscuits or bagels so I’m always a little sad when everyone piles up their plates with scrumptious food. But guess what….I’m not adding on all those calories like everyone else is!!! But I digress….I have a Tuesday morning Bible study and this week we’re having “fellowship” which means “food”! So I signed up to bring a casserole and I’m going to make it GF so I can eat it! I made TWO and served one to my boys and they loved it and had no idea that it was one of Mom’s GF concoctions. I’m feeling very excited about all the possibilities that GF Bisquick opens up for me! Hooray!

Ingredients

  • 1 (16 ounce) package bulk pork sausage
  • 1 medium red bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese
  • 3/4 cup Bisquick(TM) Gluten Free mix
  • 2 cups milk
  • 1/4 teaspoon pepper
  • 6 eggs

Directions

  1. Heat oven to 400 degrees F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook sausage, bell pepper and onion over medium heat, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.
  2. In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour over sausage mixture in baking dish.
  3. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake about 3 minutes longer or until cheese is melted. Let stand 5 minutes before serving.
