Mustard-Dill tortellini Salad with Asparagus

Great cold salad to make ahead and snack on after or during the evening baseball, soccer or lacrosse games!  Add shredded rotisserie chicken for a heartier meal.   I made this for my whole family to eat during Troy’s last baseball tournament and all the rest of the parents/fans were so envious as they ate their Subway sandwiches instead!

  • 8 oz tortellini, cheese
  • 1/2 lb asparagus, trimmed
  • 1 cup grape tomatoes, halved
  • 1/4 cup white wine vinegar
  • 1 T dill (dried), chopped
  • 1 T Dijon mustard
  • 1 clove garlic, crushed
  • 1 tsp Sugar
  • 1/2 cup olive oil

Cook tortellini according to package directions.  Cut asparagus into 1-2 inch pieces.  Add asparagus during last 2 minutes of cooking.  Drain tortellini and asparagus.

Make dressing – whisk together white wine vinegar, dill, dijon, garlic, and sugar.  Slowly add olive oil and whisk until combined.  Season to taste with S&P.

Toss tortellini, asparagus, grape tomatoes, and dressing.  Let chill.
