Serves 4-6

Ingredients:

  • 3-inch section of Pork Loin OR (3) 1-inch boneless pork loin chops
  • 1 cup all-purpose flour
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp Kosher Salt
  • ½ tsp fresh ground Pepper
  • ½ tsp Cajun seasoning (e.g., Emeril’s essence or Zataran’s Cajun seasoning)
  • 3-4 tbsp extra virgin olive oil
  • 1 cup chicken broth
  • 1 cup dry white wine (chardonnay works best)
  • Juice of 1 lemon
  • 1-3 Tbsp capers (depending on preference)
  • ½ cup grated parmesan cheese

Anderson’s Smoked Salmon

Ingredients:

  • 2 quarts water
  • 1/2 cup brown sugar
  • 1/3 cup kosher salt
  • 1 big Costco Salmon filet

Preparation:

  • In a 1 gallon Ziploc bag, combine 2 quarts of water, 1/2 cup of brown sugar and 1/3 cup of kosher salt.

2 dozen large shrimp, about 1 pound (peeled and deveined)

Seasoning Mix:
1 teaspoon ground cayenne pepper
1 teaspoon black pepper
½ teaspoon salt
½ teaspoon crushed red pepper
½ teaspoon dried thyme leaves
½ teaspoon dried rosemary leaves, crush
⅛ teaspoon dried oregano leaves

¼ pound + 5 tablespoon unsalted butter
1 teaspoon Worcestershire sauce
1 ½ teaspoon minced garlic

  • 1 medium onion, chopped
  • 3 celery stalks, chopped
