Cajun Turkey Meatloaf

Comfort food for upcoming chilly nights that will not break our new school year’s goals of eating healthy. 

INGREDIENTS:

¼ cup butter                   

1 lg. onion  (chopped)                                         2 lbs. ground turkey

½ gr. Bell pepper chopped(or pablano)        1 cup quick oats, uncooked

¼ cup chopped green onion                             1-2 eggs beaten

¼ cup chopped celery                                        ¼-1/2 cup 2% red. fat milk

2 garlic cloves, minced                                      ½ cup ketchup

1 T. hot pepper sauce

2 T. Tony Chachere’s seasoning

1 T. Worcestershire sauce

 DIRECTIONS:

Preheat oven to 350.  Melt butter in med skillet-add veggies and sauté 5 min.  Stir in hot sauce, seasoning and W.sauce.  Set aside to cool.

Place turkey in large bowl, add cooled veg’s and oats, 1 egg, ¼ cup of milk and ketchup.  Mix with hands until well blended. Add another egg and more milk if it seems dry.  Form into one large or two loafs ( if saving for leftovers or to share J).  Bake one hour.  Serves 8.
