  • 1 lb  Boneless Skinless Chicken Breast
  • 1 oz  Dried cherries (re-hydrated in 8 oz hot water)
  • 1 oz  Pecans halves (toasted – lightly chopped)
  • 2 oz Mayonnaise
  • 1 oz  Red onion  (fine dice)
  • 1.5 oz  Celery  (fine dice)
  • 1 T  Whole grain mustard
  • 1 t  Lemon juice
  • 1/2 t  Kosher salt

  • 2/3 cup fresh orange juice
  • 1/3 cup fresh lemon juice
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon grated orange zest
  • 1/2 teaspoon grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups cubed fresh pineapple
  • 2 cups strawberries, hulled and sliced
  • 3 kiwi fruit, peeled and sliced
  • 3 bananas, sliced
  • 2 oranges, peeled and sectioned
  • 1 cup seedless grapes

Beyond the Grave Chicken Salad

Salad Ingredients

  • 5 lbs. Chicken breasts
  • 2 qts water
  • Parsley sprigs
  • 1 large onion, quartered
  • 1 tsp seasoned salt
  • 2 chicken bouillon cubes

In a large pot, bring water and seasoning to a boil, add chicken, lower heat, and simmer 40 minutes.  Remove from heat, cool.  Shred chicken and refigerate.

Dressing Ingredients

  • ½ cup bottled Italian salad dressing
  • 1 cup Dukes mayonnaise
  • 1 Tbsp white vinegar
  • 1 ½ tsp celery seed
  • 2 Tbsp sugar
  • 1/8 tsp salt
  • dash paprika

Texas Country Potato Salad

Ingredients

  • 4 strips bacon
  • 1 pound small red potatoes, unpeeled (or peeled)
  • 1 green onion, sliced
  • 1 boiled egg, chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper

Directions
