Breakfast Casserole

Ingredients

  • 1 lb hot sausage. 
  • 3 cups Rice Crispie cereal. 
  • 1 small onion chopped. 
  • 3/4 cup cooked minute white rice. 
  • 1 10oz pkg of shredded sharp cheddar cheese. 
  • 5 eggs lightly beaten. 
  • 1 can of cream of mushroom soup. 
  • 1/4 cup skim milk. 

Directions

1) Brown & crumble sausage. Add onion & brown also. Drain. Set aside. 
2). Mix eggs, milk, soup, until creamy. Set aside. 
3). Use 9 x 13” casserole dish. Layer Rice, Rice Crispies, cheese, and meat. Repeat layers and end with cheese on top as last layer. 
4). Pour milk & egg mixture evenly over top. 

5). Bake at 350 for 35 mins. 

Can be made night before and stored in frig before next morning.
