Irish Cream No Bake Cookies

  • 3/4 cups unsalted butter
  • 2 cups granulated sugar
  • 2/3 cups irish cream liqueur (Bailey’s Original)
  • 1 teaspoon vanilla extract
  • 4 cups oats (minute)
  • 1/4 cups coffee creamer (powdered)
  • 3 2/5 ounces vanilla instant pudding
  1. Add butter, sugar, Irish cream, and vanilla to a large pot and bring to a boil. Keep on a rolling boil for 2 minutes.
  2. Remove from heat and stir in remaining ingredients, once fully combined, plop large spoonfuls onto wax paper and let set for about an hour.
Can replace vanilla pudding with white chocolate, chocolate, or cheesecake pudding.
Can be made without the powdered creamer.
