I started “spiralizing” zucchini last summer when I was trying to eat healthier at my kids baseball and softball games (no more concessions!) …. I have this small handheld spiralizer but I have to guess there are much better options as this one is fine but fairly small. Let me know in the comments if there is one you like better.
I must’ve seen a salad like this somewhere but really I just started adding stuff to the “zoodles” and came out with this version that has no real recipe but I love to make and eat at my kids ballgames or swim meets.
Spiralize two medium zucchinis into “zoodles”
Add mozzarella balls (I like these)
Add cherry tomatoes, halved
Add green onions, chopped
Add walnuts, chopped
Salt & pepper to taste
Combine with light italian dressing, just enough to lightly coat. Tastes even better after refrigerated for a few hours.
